Frozen Skyr with berries and chocolate

Frozen Skyr, slightly sweetened and mixed with fresh berries. Spread the mixture in a silicone tray, pour a thin layer of chocolate on top and place it in the freezer. A few hours later, you'll have a wonderfully cool snack for hot days or a summery dessert!

Ingredients

for 4 portions

Skyr mixture
200 g blueberries
150 g Skyr
1 tbsp liquid honey
1 tbsp lemon juice
Chocolate
100 g dark chocolate, finely chopped
1 tbsp coconut oil
½ tsp sea salt

How it's done

Skyr mixture

Spread the berries in the tray. Combine the Skyr, honey and lemon juice, spread on top of the berries. Cover and freeze for least 2 hrs.

Chocolate

Melt the chocolate and coconut oil in a thin-sided bowl over a gently simmering bain-marie. Spread the chocolate over the frozen Skyr mixture, sprinkle with fleur de sel. Freeze again for at least 2 hrs.

To serve

Cut the frozen Skyr into pieces, serve.
