Blueberry burrata bruschette
Ingredients
for 8 pieces
| 1 tbsp | olive oil |
| 1 | shallot, finely chopped |
| 250 g | blueberries |
| 2 tbsp | balsamic vinegar |
| ¼ tsp | chilli flakes |
| ¼ tsp | salt |
| 200 g | burrata piccola, torn into pieces |
| 250 g | bread, cut into 8 slices, toasted |
| 1 | organic lemon, use a little grated zest |
| 2 sprig | basil, leaves torn off |
| a little | sea salt |
| a little | pepper |
How it's done
Blueberries
Heat the oil in a non-stick frying pan. Add the shallot, sauté for approx. 2 mins. Add the balsamic and blueberries, simmer for approx. 3 mins., season, allow to cool slightly.
Bruschette
Arrange the burrata and blueberries on the slices of bread, sprinkle with lemon zest and basil, and season.
