Crostini with Parmesan and anchovies
Ingredients
for 4 people
| 1 glass | anchovy fillet (approx. 90 g), drained |
| 1 | organic lemon, use grated zest and 1 tbsp of juice |
| 1 | garlic clove, finely chopped |
| a little | pepper |
| 30 g | butter |
| 100 g | baby spinach |
| 1 pinch | salt |
| 150 g | ciabatta bread, cut into 8 slices, toasted |
| 40 g | Parmesan by the piece, finely sliced |
How it's done
Anchovies
In a bowl, mix the anchovies with all the other ingredients up to and including the pepper.
Spinach
Heat the butter in a frying pan until it foams and smells nutty. Add the spinach and allow to wilt, season with salt.
Crostini
Spread spinach on the bread slices, then top with anchovies and Parmesan.
