Pulled chicken on whipped feta
Ingredients
for 4 person
| 1 | red onion, thinly sliced |
| ½ dl | water |
| 3 tbsp | white wine vinegar |
| ¼ tsp | sugar |
| ¼ tsp | salt |
| 1 tbsp | olive oil |
| 2 | chicken breasts (each approx. 150 g) |
| 1 tsp | hot paprika |
| ½ tsp | salt |
| 1 | organic lemon, use a little grated zest and 1 tbsp of juice |
| 100 g | feta, cut into pieces |
| 100 g | plain greek yoghurt |
How it's done
Onions
Place the onion in a pan along with all the other ingredients up to and including the salt, mix, bring to the boil. Cover and simmer for approx. 2 mins., set aside.
Chicken
Heat the oil in a non-stick frying pan. Season the chicken breasts, fry for approx. 7 mins. on each side. Place the chicken breasts in a bowl, pull apart using two forks. Add the lemon zest and juice, mix.
Whipped feta
Place the feta and yoghurt in a measuring cup, puree until creamy.
To serve
Spread the whipped feta on a platter. Top with the chicken and onions.
