Muffin cheese tarts

Carnival is just around the corner, and in Basel there's a special sense of anticipation in the air. To mark the occasion, here's my recipe for muffin cheese tarts. These delicious bites are simply perfect for an aperitif with friends before the carnival.

Ingredients

for 12 pieces

To prepare
puff pastry dough, rolled into a rectangle
Filling
250 g grated Gruyère (see below)
eggs
2 dl single cream
2 tsp caraway seeds
red onions, cut into thin rings
To bake
2 pinch salt
a little  pepper

How it's done

To prepare

Roll out the pastry, cut the pastry and baking paper into 12 equal-sized rectangles using scissors. Place the pastry in the tin along with the baking paper and gently press down the bases.

Filling

Mix the cheese, eggs, cream and caraway seeds thoroughly in a bowl, place in the pastry wells. Top with the onion rings.

To bake

Approx. 18 mins. in the centre of an oven preheated to 200 °C. Remove, leave the tarts to cool slightly on a rack, season, serve warm.
