Lamb loin with strawberry salad
Ingredients
for 4 people
| 1 tbsp | olive oil for frying |
| 400 g | lamb loins |
| ½ tsp | salt |
| 1 ½ tbsp | lime juice |
| 1 tbsp | olive oil |
| ¼ tsp | chilli flakes |
| ¼ tsp | ground cumin |
| ½ tsp | salt |
| 500 g | strawberries, quartered |
| 1 tin | sweetcorn (approx. 160 g), rinsed and drained |
| 30 g | roasted, salted chickpeas |
| 1 bunch | coriander, leaves torn off |
How it's done
Lamb
Heat the oil in a frying pan. Salt the meat, fry for approx. 2 mins. on each side. Remove from the oven, cover and leave to rest for approx. 5 mins.
Strawberry salad
In a bowl, mix the lime juice with all the other ingredients up to and including the salt. Add the strawberries and all the remaining ingredients, mix. Carve the meat and serve with the strawberry salad.
