Lamb loin with strawberry salad

Ingredients

for 4 people

Lamb
1 tbsp olive oil for frying
400 g lamb loins
½ tsp salt
Strawberry salad
1 ½ tbsp lime juice
1 tbsp olive oil
¼ tsp chilli flakes
¼ tsp ground cumin
½ tsp salt
500 g strawberries, quartered
1 tin sweetcorn (approx. 160 g), rinsed and drained
30 g roasted, salted chickpeas
1 bunch coriander, leaves torn off

How it's done

Lamb

Heat the oil in a frying pan. Salt the meat, fry for approx. 2 mins. on each side. Remove from the oven, cover and leave to rest for approx. 5 mins.

Strawberry salad

In a bowl, mix the lime juice with all the other ingredients up to and including the salt. Add the strawberries and all the remaining ingredients, mix. Carve the meat and serve with the strawberry salad.
