Trout with radish
Ingredients
for 2 people
| 300 g | baby potatoes, quartered lengthwise |
| salted water, boiling |
| 125 g | smoked trout filets, torn into pieces |
| 1 dl | water |
| 1 tbsp | lemon juice |
| a little | pepper |
| 2 tbsp | mayonnaise |
| 1 bunch | radish incl. green parts, finely sliced, a few greens set aside |
| ½ tbsp | olive oil |
| ¼ tsp | salt |
| 20 g | pine nuts, roasted |
How it's done
Potatoes
Cook the potatoes in boiling salted water for approx. 10 mins. until just soft. Drain the potatoes, allow to cool slightly.
Trout
Place the trout in a measuring cup along with all the other ingredients up to and including the pepper, puree. Mix in the mayonnaise.
To serve
Arrange the trout and potatoes on a platter. Place the radishes and some radish greens on top, drizzle with oil, season with salt. Sprinkle the pine nuts on top.
