Mate and hibiscus iced tea

Ingredients

for 2 litres

Iced tea
2 tbsp Yerba Mate
5 bag rose hip tea with hibiscus
1 ⅓ litre water, boiling
40 g ginger, finely grated
80 g sugar
3 tbsp lemon juice
6 dl water, chilled
To serve
some  ice cubes
20 g ginger, in slices

How it's done

Iced tea

Place the tea in the boiling water, remove the pan from the heat. Add the ginger and stir, then leave to infuse for approx. 5 mins. Pour the tea through a sieve into a large jug or a bowl. Add the sugar, stir. Pour in the lemon juice and water, leave to cool. Chill the iced tea for at least 2 hrs.

To serve

Pour the iced tea into glasses with ice cubes, garnish with ginger.
