Halloumi croissants
Ingredients
for 4 people
4 slice | bacon |
a little | oil for frying |
200 g | halloumi, coarsely grated |
4 | croissants, cut lengthwise |
1 | avocado, halved, pitted |
2 tbsp | apricot jam |
1 | red chilli, deseeded, finely chopped |
How it's done
Bacon
Without adding any oil, gently fry the bacon in a non-stick frying pan until crispy. Remove and drain on paper towels.
Croissants
Heat the oil in the same pan. Add half of the halloumi and cook until the cheese melts. Place the bottom halves of two croissants on top of the cheese with the cut side facing downwards, press down slightly, cook for approx. 2 mins. Repeat this process with the remainder of the halloumi and croissants.
To serve
Slice the avocado, place on the croissants, combine the jam and chilli, spread over the avocado. Place the bacon on top and cover with the top halves of the croissants.
