Avocado bread sandwich

What I love about viral recipes on social media is that they encourage us to try brand new ideas. Take this avocado bread, for example, which uses just three ingredients – or four if you include sesame seeds. These flatbreads are soft, perfect for a sandwich and what's more they taste of delicious grilled cheese.

Ingredients

for 4 pieces

Avocado bread
avocados, cut into pieces
eggs
120 g grated hard cheese
1 tsp black sesame seeds, as desired
Filling
100 g hummus
lettuce leaves
tomatoes, thinly sliced
½  cucumber, thinly sliced
peppermint leaves

How it's done

Avocado bread

Place the avocado, eggs and cheese in a measuring cup, puree. Divide the mixture into 8 pieces and place on a baking tray lined with baking paper, leaving plenty of space between each piece, press down into patties (each approx. 9 cm in diameter). Sprinkle with sesame seeds.

To bake

Approx. 20 mins. in the lower half of an oven preheated to 180 °C. Remove, allow to cool slightly.

Filling

Cover half of the avocado bread pieces with hummus, top with the lettuce, tomato, cucumber and mint, cover with the remaining bread pieces.
