Baked apple punch
Ingredients
for 4 people
8 dl | apple juice |
2 | cloves |
1 | cinnamon stick |
1 | vanilla pod, cut lenghtwise, seeds scratched out |
½ tbsp | butter |
1 | red-skinned apple, deseeded, diced |
¼ tsp | cinnamon |
½ tbsp | ground cane sugar |
1 dl | dark rum |
1 dl | cream, beaten until stiff |
1 tsp | cinnamon |
How it's done
Punch
Pour the apple juice into a pan, bring to the boil. Reduce the heat, add the cloves, cinnamon stick, vanilla pod and seeds, simmer over a low heat for approx. 5 mins. Remove the pan from the heat, cover the punch and allow to infuse for approx. 15 mins.
Apple
Heat the butter in a pan. Add the apple, sauté for approx. 2 mins. Add the cinnamon and sugar, cook for approx. 3 mins. until the sugar is lightly caramelized. Divide half the diced apple between the glasses.
To serve
Remove the cloves, cinnamon stick and vanilla pod from the punch. Pour in the rum, bring back to the boil, pour into the glasses. Mix the whipped cream and cinnamon, spoon on top, sprinkle with the remainder of the diced apple.
