Schiacciata di patate
Ingredients
for 8 pieces
| 150 g | courgettes, coarsely grated |
| 1 tsp | salt |
| 400 g | waxy potatoes, peeled, coarsely grated |
| 75 g | grated Parmesan |
| 3 tbsp | olive oil |
| a little | nutmeg |
How it's done
Courgettes
Mix the courgettes and salt in a bowl, leave to absorb for approx. 10 mins. Place the courgettes in a sieve, squeeze out excess liquid.
Schiacciata
Place the courgettes and the potatoes in a bowl. Add 50 g of parmesan, the oil and the nutmeg, mix, spread thinly on a baking sheet lined with baking paper. Sprinkle with the remainder of the parmesan.
To bake
Approx. 25 mins. on the bottom shelf of an oven preheated to 200 °C (convection) until the edges are golden brown. Remove, cut into pieces.
