Quick, easy and prepared with just a handful of ingredients. Schiacciata di patate are grated potatoes (and courgettes) baked in the oven until crispy. So simple, yet so good. It's delicious with a salad, an aperitif or made into a sandwich.

Ingredients

for 8 pieces

Courgettes
150 g courgettes, coarsely grated
1 tsp salt
Schiacciata
400 g waxy potatoes, peeled, coarsely grated
75 g grated Parmesan
3 tbsp olive oil
a little  nutmeg

How it's done

Courgettes

Mix the courgettes and salt in a bowl, leave to absorb for approx. 10 mins. Place the courgettes in a sieve, squeeze out excess liquid.

Schiacciata

Place the courgettes and the potatoes in a bowl. Add 50 g of parmesan, the oil and the nutmeg, mix, spread thinly on a baking sheet lined with baking paper. Sprinkle with the remainder of the parmesan.

To bake

Approx. 25 mins. on the bottom shelf of an oven preheated to 200 °C (convection) until the edges are golden brown. Remove, cut into pieces.
