Bruschette with cherries

Watch out, here comes a fruity twist! Many people are familiar with the classic bruschetta with tomatoes, but my variation uses cherries. The combination of cherries and balsamic vinegar guarantees a explosion of flavours and is sure to make an impression.

Ingredients

for 12 pieces

Baguette
200 g baguettes, cut into approx. 1 cm slices
Cherries
3 tbsp olive oil
1 tbsp balsamic vinegar
¼ tsp salt
a little  pepper
250 g cherries, pitted, quartered
red onion, finely chopped
garlic clove, squeezed
½ bunch basil
Bruschetta
2 sprig basil, leaves torn off

How it's done

Baguette

Place the slices of bread on a baking tray lined with baking paper.

To bake

Approx. 5 mins. in the upper half of an oven preheated to 220 °C. Remove.

Cherries

Mix the oil and balsamic in a bowl, season. Add the cherries, onion, garlic and basil, mix.

Bruschetta

Arrange the cherries on the bread, garnish with basil and serve immediately.
