Grilled apricot and chicken skewers
Ingredients
for 8 pieces
2 tbsp | rice vinegar |
3 tbsp | peanut oil |
2 tbsp | soy sauce |
3 tbsp | apricot jam |
2 | garlic cloves, finely chopped |
a little | pepper |
500 g | chicken breasts, cut into pieces approx. 3 cm wide |
8 | apricots, cut in half |
8 | metal skewers |
How it's done
To marinate
In a bowl, mix the rice vinegar with all the other ingredients up to and including the pepper, set aside half of the marinade. Add the chicken to the remainder of the marinade, mix, cover and marinate for approx. 30 mins.
Skewers
Thread the chicken and apricots onto the skewers.
Charcoal/gas/electric grill
With the lid down, grill the chicken skewers over/on a medium heat (approx. 200 °C) for approx. 5 mins. on each side. Place the skewers on a platter, brush with the reserved marinade.
