Artichoke and potato skewers
Ingredients
for 8 people
1 tbsp | Truffle oil |
250 g | waxy potatoes, cut into slices approx. 2 cm thick |
¼ tsp | salt |
a little | pepper |
1 glass | artichoke hearts in oil (approx. 280 g), drained, halved |
100 g | coppa in slices |
8 | wooden skewers |
How it's done
Potatoes
Heat the oil in a non-stick frying pan. Add the potatoes, reduce the heat, fry for approx. 15 mins., turning occasionally, season. Remove, allow to cool slightly.
Skewers
Thread the artichokes, coppa and potatoes alternately onto the skewers, serve the skewers on a platter.
