Radish bruschetta
Ingredients
for 4 pieces
2 tbsp | red wine vinegar |
1 tsp | liquid honey |
2 pinch | salt |
a little | pepper |
1 bunch | radish incl. green parts *-* |
½ bunch | parsley |
50 g | almonds, coarsely chopped |
1 | organic lemon, use a little grated zest |
3 tbsp | olive oil |
2 pinch | salt |
2 | bread rolls (each approx. 100 g), halved lengthwise |
300 g | Fine Food Burrata piccola, cut in half |
a little | Micro Greens |
How it's done
Radish salad
Whisk the vinegar and honey in a bowl, season. Add the radishes, mix. Put the radish greens in a measuring cup.
Radish pesto
Add the parsley, almonds, lemon zest, oil and salt to the radish greens, puree.
Bruschetta
Spread the radish pesto on the insides of the halved bread rolls. Top with the burrata, radish salad and micro greens.
