Roast beef sandwiches
Ingredients
for 2 people
1 tbsp | olive oil |
1 tbsp | butter |
2 | onions, cut into thin slices |
¼ tsp | salt |
2 tbsp | balsamic vinegar |
1 | ciabatta bread (approx. 240 g) |
150 g | plain greek yoghurt |
1 ½ tbsp | mayonnaise |
½ tbsp | mustard |
¼ tsp | salt |
a little | pepper |
80 g | roast beef in slices |
40 g | rocket |
How it's done
Onions
Heat the oil and butter in a non-stick frying pan. Add the onions, season with salt, cook for approx. 10 mins., stirring occasionally. Add the balsamic vinegar, cook for approx. 1 min.
Sandwiches
Cut the ciabatta in half and slice both halves open. Combine the yoghurt with all the other ingredients up to and including the pepper, spread onto the cut surfaces. Top with onions, roast beef and rucola, cover with the top half of the ciabatta.
