Spaghetti with agretti

Ingredients

for 2 people

Pasta
200 g spaghetti
  salted water, boiling
Agretti
80 g bacon strips, cut into thin slices
300 g agretti
½ tsp chilli flakes
¼ tsp salt
40 g Pecorino, coarsely grated

How it's done

Pasta

Cook the pasta in boiling salted water until al dente, drain and reserve approx. 100 ml of the cooking water.

Agretti

Without adding any oil, gently fry the bacon in a non-stick frying pan until crispy. Remove and drain on paper towels. Sauté the agretti in the same pan for approx. 3 mins., add the chilli flakes, season with salt. Mix in the reserved cooking water and the pasta, heat gently. Mix in the bacon and pecorino.
