Crostini with tomatoes and mozzarella
Ingredients
for 4 people
| 1 tbsp | balsamic vinegar |
| ½ tbsp | olive oil |
| 500 g | different coloured cherry tomatoes, cut in half or into quarters |
| ¼ tsp | salt |
| a little | pepper |
| 150 g | mozzarella, coarsely grated |
| 100 g | ricotta |
| ¼ tsp | salt |
| a little | pepper |
| 250 g | ciabatta bread, cut into 8 slices, toasted |
| 3 sprig | basil, leaves torn off |
How it's done
Tomatoes
Whisk together the balsamic and oil, mix in the tomatoes, season.
Cream cheese
Mix the mozzarella and ricotta, season.
Crostini
Spread the cheese on the slices of bread, top with the tomatoes, garnish with the basil.
