Halloumi bites
Ingredients
for 4 people
| 2 | red chillies, cut into pieces |
| 1 | garlic clove |
| 2 tbsp | rice vinegar |
| 2 tbsp | soy sauce |
| 60 g | sugar |
| 1 tbsp | Maizena cornflour |
| ½ dl | water |
| 50 g | white flour |
| 100 g | cornflakes |
| 40 g | grated Parmesan |
| 2 tbsp | sesame seeds |
| 1 tsp | mild paprika |
| 2 | eggs |
| 400 g | halloumi, cut into approx. 2 cm cubes |
How it's done
Chilli sauce
Place the chillis in a measuring cup along with all the other ingredients up to and including the sugar, puree.
Pour the mixture into a pan. Stir the cornflour into the water, add to the pan, bring the sauce to the boil, simmer for approx. 3 mins. until the sauce turns creamy, set aside.
Halloumi
Empty the flour into a deep dish. Place the cornflakes in a plastic bag, crush, transfer to a deep dish. Add the parmesan, sesame seeds and paprika, mix. Beat the eggs in a deep dish. Toss the halloumi in the flour, dip in the egg and then in the cornflakes mixture, place on a baking tray lined with baking paper.
Bake
Approx. 20 mins. in the centre of an oven preheated to 220 °C, turning the halloumi over halfway through. Remove, serve the halloumi with the chilli sauce.
