Mediterranean nachos

Ingredients

for 4 people

Pitas
pita breads (approx. 300 g)
1 tbsp olive oil
3 sprig oregano, finely chopped
¼ tsp cumin
Mince
1 tbsp olive oil
400 g minced meat (beef)
red onion, finely chopped
garlic clove, squeezed
1 tbsp tomato puree
1 tsp hot paprika
1 dl meat bouillon
  salt and pepper to taste
Serve
200 g feta, roughly crumbled
60 g pitted black olives drained, halved
60 g dried tomatoes in oil, drained, cut into strips

How it's done

Pitas

Cut the pitas into eighths, mix in a bowl with the oil, oregano and cumin, stir fry for approx. 4 mins. per batch. Remove, keep warm.

Mince

Heat the oil in the same pan. Brown the meat for approx. 4 mins. per batch, remove. Reduce the heat, add the onion, garlic, tomato puree and paprika, sauté for approx. 3 mins. Return the mince to the pan, mix. Pour in the stock, simmer for approx. 10 mins., stirring occasionally season.

Serve

Arrange the pita bread on a platter. Serve warm with the mince, feta, olives and tomatoes.
