Beef steak with cherry salsa

Ingredients

for 4 people

Cherry salsa
2 tbsp balsamic vinegar
1 tbsp olive oil
1 tbsp maple syrup
¼ tsp salt
¼ tsp pink peppercorn, crushed
500 g cherries, pitted, halved
½  red onion, finely chopped
Charcoal/gas/electric grill
rib eye steaks (each approx. 150 g)
¾ tsp salt
a little  pink peppercorn, crushed
1 tbsp maple syrup

How it's done

Cherry salsa

Combine the balsamic, oil and maple syrup, season. Add the cherries and onions, mix.

Charcoal/gas/electric grill

Season the steaks, grill over/on a very high heat (approx. 240 °C) for approx. 3 mins. on each side. Brush the steaks with maple syrup. Carve the meat into thin slices, serve with the salsa.
