Squash & cheese toasties

When you’re very hungry and don’t have much time, these squash & cheese toasties are just the ticket. They are quick to make and you’ll have most of the ingredients at hand anyway. The squash can easily be replaced by carrots.

Ingredients

for 4 person

Squash
1 tbsp olive oil
300 g squash, coarsely grated
red onion, cut into strips
garlic clove, finely chopped
2 sprig rosemary, finely chopped
½ tsp salt
a little  pepper
Toasties
120 g fondue cheese mix
8 slice rye bread (approx. 300 g)
1 sprig rosemary, torn into pieces

How it's done

Squash

Heat the oil in a non-stick frying pan. Fry the squash, onion, garlic and rosemary for approx. 5 mins., stirring occasionally, then season. Place the squash in a bowl, allow to cool slightly.

Toasties

Add the cheese mixture to the squash, mix. Place the bread slices on a baking tray lined with baking paper, top with the squash and cheese mixture, sprinkle with rosemary.

To bake

Approx. 10 mins. on the top shelf of an oven preheated to 220 °C.
