Pizza soup sounds a bit weird at first hearing, but basically everything you put on a pizza can also be eaten as soup. Tomatoes, mozzarella, peppers, mushrooms... Strictly speaking, this is a tomato soup with many other ingredients of your choice, which you can add as you wish. If you like, add mince, or whatever else you have in the fridge. The pizza soup tastes delicious, it's a bit like soul food and it's a great way to use leftovers.

Ingredients

for 4 person

Soup
2 tbsp olive oil
onion, finely chopped
bell pepper, cut into cubes
100 g mushrooms, cut into cubes
100 g rocket, roughly chopped
3 tbsp tomato puree
1 tin chopped tomatoes (approx. 800 g)
3 dl vegetable bouillon
1 tsp sugar
1 tsp dried oregano
¼ tsp chilli powder
  salt and pepper to taste
To serve
burrata piccola (approx. 200 g)
100 g Parmesan, shaved into strips using a peeler
a little  rocket

How it's done

Soup

Heat the oil in a pan. Briefly sauté the onion. Briefly steam the peppers, mushrooms, rocket and tomato puree. Add the tomatoes, pour in the stock, bring to the boil. Reduce the heat, season with salt, simmer for approx. 15 mins.

To serve

Serve the soup in deep dishes or bowls, garnish with burrata, parmesan and rocket.
