Tacos with prawns and mango
Ingredients
for 4 people
| 1 | mango, cut into approx. 1 cm cubes |
| 2 tbsp | white wine vinegar |
| 1 tbsp | olive oil |
| ¼ tsp | chilli flakes |
| ¼ tsp | salt |
| a little | pepper |
| 1 tbsp | olive oil |
| 3 | garlic cloves, sliced |
| 200 g | shelled, raw prawns |
| ¼ tsp | salt |
| a little | pepper |
| 1 tin | sweetcorn (approx. 140 g), rinsed, drained |
| ½ | spring onion incl. green part, cut diagonally into slices approx. 5 mm thick |
| 200 g | sour single cream |
| 8 piece | taco shells |
How it's done
Mango
Place the mango in a small bowl along with all the other ingredients up to and including the pepper, mix.
Prawns
Heat the oil in a non-stick frying pan. Add the garlic and prawns, fry for approx. 3 mins., remove, season.
Tacos
Fill the tacos with the prawns, mango, sweetcorn, spring onion and sour cream.
