Tacos with prawns and mango

Ingredients

for 4 people

Mango
mango, cut into approx. 1 cm cubes
2 tbsp white wine vinegar
1 tbsp olive oil
¼ tsp chilli flakes
¼ tsp salt
a little  pepper
Prawns
1 tbsp olive oil
garlic cloves, sliced
200 g shelled, raw prawns
¼ tsp salt
a little  pepper
Tacos
1 tin sweetcorn (approx. 140 g), rinsed, drained
½  spring onion incl. green part, cut diagonally into slices approx. 5 mm thick
200 g sour single cream
8 piece taco shells

How it's done

Mango

Place the mango in a small bowl along with all the other ingredients up to and including the pepper, mix.

Prawns

Heat the oil in a non-stick frying pan. Add the garlic and prawns, fry for approx. 3 mins., remove, season.

Tacos

Fill the tacos with the prawns, mango, sweetcorn, spring onion and sour cream.
