Tomato bites
Ingredients
for 32 pieces
| 1 | puff pastry dough, rolled into a rectangle (approx. 25 x 42 cm) |
| 100 g | basil pesto |
| 300 g | tomatoes, (e.g. Yoom tomatoes), cut into approx. 5 mm slices |
| 2 tbsp | pine nuts |
| ½ tsp | sea salt |
| a little | pepper |
| 30 g | basil pesto |
How it's done
Bites
Roll out the dough, cut into 32 equal rectangles, place on two baking trays lined with baking paper. Top with the pesto, leaving a border of approx. 5 mm all the way around. Place one slice of tomato on each. Sprinkle with pine nuts, season.
To bake
Approx. 15 mins. per tray in the lower half of an oven preheated to 220°C. Remove, drizzle with pesto.
