Mini apricot and bacon rolls
Ingredients
for 12 pieces
| 12 | dried apricots |
| 140 g | bacon strips |
| 80 g | crème fraîche |
| 2 tbsp | tomato puree |
| ¼ tsp | salt |
| a little | pepper |
How it's done
Apricots
Wrap each apricot in a rasher of bacon. Place in a non-stick frying pan and fry gently (without oil) for approx. 5 mins. all over until crispy.
Dip
Mix the crème fraîche and tomato puree, season. Serve with the apricots.
