Tuna tartare canapés
Ingredients
for 8 person
| 1 | organic lime, grated zest, juice set aside |
| 1 tbsp | olive oil |
| ½ tbsp | sesame seeds |
| ½ tsp | chilli flakes (e.g. Fine Food Chile Chipotle) |
| 1 tsp | sea salt |
| 200 g | yellowfin tuna, sushi quality, diced finely |
| 70 g | pomegranate seeds |
| ½ bunch | coriander, finely chopped |
| 1 | ripe avocado, cut into pieces |
| ½ tbsp | olive oil |
| ¼ tsp | salt |
| 30 g | tortilla chips |
How it's done
Tartare
Mix the lime zest and 1 tbsp of lime juice with all the other ingredients up to and including the fleur de sel. Add the tuna, pomegranate seeds and coriander, mix carefully.
Canapés
Puree the avocado with the remainder of the lime juice and the oil until smooth, season with salt. Spread a little of the avocado puree over the tortilla chips, top with the tartare.
