Breakfast tortilla
Ingredients
for 2 person
| 1 tbsp | olive oil |
| 350 g | waxy potatoes, thinly sliced |
| 150 g | pimientos de Padrón |
| ¼ tsp | salt |
| a little | pepper |
| 4 | fresh eggs, beaten |
| ½ tsp | smoked paprika |
| ¼ tsp | salt |
How it's done
Potatoes
Heat the oil in a large non-stick frying pan. Fry the potatoes for approx. 6 mins., add the pimientos and cook for approx. 3 mins., season. Reduce the heat.
Egg mixture
Season the eggs. Pour the mixture over the potatoes, cover and allow to solidify over a medium heat for approx. 20 mins. Plate up and serve.
