One-pan toasties

These one-pan toasties can be filled however you like, are ready in a flash and taste fantastic. You can simply fill them with eggs, leek and cheese – as in this recipe – or pack them full of vegetables. These toasties can also give some of the more lethargic-looking vegetables in your vegetable drawer a new lease of life. Or old bread. This recipe is a delicious way to use up leftovers. Why not try it with grated carrot, finely chopped kale or Chinese cabbage, Savoy cabbage, tomatoes or sliced mushrooms, courgette, fennel or pepper.

Ingredients

for 4 pieces

Egg mixture
fresh eggs
¼ tsp chilli powder
¼ tsp salt
a little  pepper
Toasties
60 g butter
200 g leek, cut into thin slices
8 slice toast bread
160 g cheese slices

How it's done

Beat the eggs in a measuring cup, season.

Toasties

Heat ¼ of the butter in a non-stick frying pan. Add ¼ of the leek, fry for approx. 1 min. Pour in ¼ of the egg mixture, dip 2 slices of toast bread in the egg while still runny, press down gently. Allow the egg mixture to solidify over a medium heat, turn. Fold in the overlapping egg, place slices of cheese on one piece of toast bread, top with the second piece, fry for approx. 2 mins. on each side until golden brown. Repeat the process with the remaining ingredients.
