Grilled peppers with burrata
Ingredients
for 2 person
| 2 | red peppers, quartered |
| ½ tbsp | olive oil |
| ¼ tsp | salt |
| 1 ½ tbsp | breadcrumbs |
| ½ bunch | flat-leaf parsley, finely chopped |
| 1 tbsp | olive oil |
| 200 g | burrata piccola, torn into pieces |
| ¼ tsp | sea salt |
| a little | pepper |
How it's done
Barbecue (charcoal, gas, electric barbecue)
Brush the peppers with oil, season with salt. Cover and grill the peppers over/on a medium heat (approx. 220°C) for approx. 5 mins. on each side.
Filling
Mix the breadcrumbs, parsley and oil. Spread the burrata on top of the peppers, scatter the breadcrumb mixture on top. Cover and grill for approx. 5 mins., season.
