Crostini with cherry and olive skewers
Ingredients
for 4 person
| 1 tbsp | white balsamic vinegar |
| 1 | organic lime, grated zest and the juice |
| 2 tbsp | olive oil |
| ½ tbsp | liquid honey |
| 1 tbsp | thyme leaf |
| ¼ tsp | salt |
| 250 g | cherries, pitted |
| 150 g | Kalamata olives, pitted |
| 12 | short wooden skewers (soaked in water for approx. 30 mins. |
| ½ | baguette (approx. 130 g), cut diagonally into approx. 12 slices |
| 150 g | soft goats' cheese |
How it's done
Skewers
Whisk the balsamic, lime zest, lime juice, oil, honey, thyme and salt in a bowl. Add the cherries and olives, mix and thread alternately onto the skewers. Set aside the remainder of the dressing.
Barbecue (charcoal, gas, electric barbecue)
Brush both sides of the sliced bread with half of the reserved dressing. Cover and grill the skewers over/on a medium heat (approx. 200°C) for approx. 4 mins. all over. Grill the bread alongside for approx. 2 mins. on each side.
To serve
Spread the cheese on top of the crostini, add the skewers, drizzle with the remainder of the dressing.
