Ingredients

for 1 person

Cocktail
4 cl gin (e.g. Nordés Atlantic Galician Gin)
3 cl lemon juice
2 cl forest honey
sage leaves
some  ice cubes
To serve
5 cl tonic water (e.g. Fever Tree Mediterranean Tonic Water)
¼  organic lemon, zest peeled with a peeler
sage leaf

How it's done

Cocktail

Place the gin, lemon juice, honey and sage leaves in the shaker, top up with ice cubes, shake well for approx. 30 secs. Pour the cocktail through the strainer and a fine sieve into a coupette glass.

To serve

Pour in the tonic water, decorate the cocktail with lemon peel and a sage leaf.
