Tomato skewers on crostini
Ingredients
for 4 person
| 1 tbsp | white balsamic vinegar |
| 3 tbsp | olive oil |
| 1 tbsp | liquid honey |
| 1 | garlic clove, squeezed |
| ¼ tsp | salt |
| a little | pepper |
| 250 g | cherry tomatoes |
| 4 | wooden skewers |
| 4 | bread slices, wholegrain |
| 1 | garlic clove |
| 2 tbsp | olive oil |
| ¼ bunch | thyme, finely chopped |
| ¼ tsp | salt |
| 1 | burrata (approx. 150 g), torn into pieces |
| ¼ bunch | thyme, finely chopped |
How it's done
Tomato skewers
Mix the balsamic, oil, honey and garlic, season. Mix the cherry tomatoes with the dressing and thread onto the skewers. Set aside the remainder of the dressing.
Charcoal/gas/electric grill
Rub both sides of the bread with garlic. Combine the oil and thyme, brush the bread slices with the oil, season with salt. With the lid down, grill the tomato skewers over/on a medium heat (approx. 200°C) for approx. 10 mins. on all sides. Grill the bread alongside for approx. 2 mins. on each side.
To serve
Arrange the burrata on top of the grilled bread. Add the tomato skewers, drizzle with the reserved dressing, garnish with thyme.
