Five-ingredient banana bread cookies

Banana bread is so yesterday! These days it's all about banana bread cookies! Containing just five ingredients, these cookies are vegan and take just 20 minutes to make. Apart from the natural sugar in the bananas, they are sugar free. As such, they make a great snack for between meals. You can expand the "basic" recipe to include nuts, chocolate chunks, raisins, etc., as desired.

Ingredients

for 12 pieces

Cookie dough
ripe bananas
4 tbsp white almond cream
240 g almond flour
½ tsp sodium bicarbonate
1 pinch sea salt

How it's done

Cookie dough

Puree the bananas and almond butter in a blender. Mix the almond flour, baking soda and salt, mix into the banana puree. Using a teaspoon, spoon the cookie dough into small, well-spaced mounds on a baking tray lined with baking paper.

To bake

Approx. 15 mins. in the centre of an oven preheated to 180°C. Remove from the oven, leave to cool completely on a rack.
