Vegan tarte flambée

Recently I found myself craving tarte flambée all of a sudden – something I've never made in vegan form before. I decided to try it out and the result was a delicious vegan version of a classic tarte flambée with a tasty cashew cream, smoked tofu and onions. Simply divine!

Ingredients

for 4 person

Sauce
5 tbsp cashew cream
5 tbsp water
1 tsp apple vinegar
½ tsp miso paste
1 tbsp nutritional yeast
  salt and pepper to taste
Tofu
1 tbsp olive oil
200 g smoked tofu with chesnuts, cut into cubes
Tarte flambée
tarte flambée dough, rolled into a rectangle
red onion, cut into strips
To bake
½ bunch chives, finely chopped

How it's done

Sauce

Combine the cashew butter with all the other ingredients up to and including the yeast, season.

Tofu

Heat the oil in a non-stick frying pan. Fry the tofu for approx. 5 mins. until crispy, stirring occasionally, then set aside.

Tarte flambée

Roll out the dough and place on a tray along with the baking paper. Spread the sauce on top of the dough, top with the onion and tofu.

To bake

Approx. 10 mins. in an oven preheated to 220°C (convection). Remove from the oven and sprinkle with chives.
