Beetroot mousse with crackers
Ingredients
for 4 person
120 g | boiled beets, peeled, chopped |
1 tbsp | lemon juice |
¼ tsp | salt |
100 g | horseradish mousse |
30 g | boiled beets, cut into cubes |
1 tbsp | coarse-grain mustard |
100 g | crackers |
½ tsp | Tasmanian pepper |
10 g | Micro Greens |
How it's done
Beetroot
Puree the beetroot with the lemon juice, season with salt. Mix in the horseradish mousse, diced beetroot and mustard.
To serve
Spread the beetroot mousse on the crackers, season with pepper and garnish with micro greens.
