Pita sandwich with chicken breast
Ingredients
for 6 pieces
4 | chicken breasts (each approx. 150 g) |
½ tsp | salt |
a little | pepper |
oil, for frying |
6 | pita breads |
4 tbsp | pesto verde (green pesto) |
3 | tomatoes, cut into slices |
250 g | mozzarella, cut into slices |
50 g | rocket |
How it's done
Chicken breasts
Season the chicken. Heat the oil in a frying pan, fry the chicken over a medium heat for approx. 6 mins. on each side. Remove, cut into approx. 5 mm slices.
To bake the pitas
Bake the pitas according to the packet instructions. Remove, allow to cool slightly.
To fill the pitas
Cut the pitas in half crosswise, spread the pesto over the cut surfaces. Sandwich the tomato, chicken, mozzarella and rocket between the top and bottom halves.
