Gazpacho with melon and feta

Ingredients

for 4 person

Gazpacho
600 g watermelons, cut into pieces
tomatoes, cut into pieces
yellow pepper, cut into pieces
red chilli pepper, deseeded, cut into pieces
garlic clove
2 tbsp olive oil
2 tbsp white balsamic vinegar
1 dl water
1 tsp sugar
1 ½ tsp salt
a little  pepper
To serve
200 g watermelons, cut into cubes
80 g feta, crumbled
some  peppermint leaves

How it's done

Gazpacho

Using a blender, puree the melon with all the other ingredients up to and including the pepper. Cover and chill for approx. 1 hr.

To serve

Pour the gazpacho into glasses, bowls or soup plates, top with melon cubes, feta and mint.
