Gazpacho with melon and feta
Ingredients
for 4 person
| 600 g | watermelons, cut into pieces |
| 2 | tomatoes, cut into pieces |
| 1 | yellow pepper, cut into pieces |
| 1 | red chilli pepper, deseeded, cut into pieces |
| 1 | garlic clove |
| 2 tbsp | olive oil |
| 2 tbsp | white balsamic vinegar |
| 1 dl | water |
| 1 tsp | sugar |
| 1 ½ tsp | salt |
| a little | pepper |
| 200 g | watermelons, cut into cubes |
| 80 g | feta, crumbled |
| some | peppermint leaves |
How it's done
Gazpacho
Using a blender, puree the melon with all the other ingredients up to and including the pepper. Cover and chill for approx. 1 hr.
To serve
Pour the gazpacho into glasses, bowls or soup plates, top with melon cubes, feta and mint.
