Tomato tortilla
Ingredients
for 2 person
| 1 tbsp | olive oil |
| 350 g | potato waxy, very thinly sliced |
| 200 g | cherry tomato, halved |
| ¼ tsp | salt |
| a little | pepper |
| 4 | fresh egg |
| 100 g | Manchego, roughly grated |
| ¼ tsp | salt |
| a little | pepper |
How it's done
Potatoes and tomatoes
Heat the oil in a non-stick frying pan. Stir-fry the potatoes for approx. 4 mins., add the tomatoes and cook for approx. 2 mins., season. Reduce the heat.
Sauce
Combine the eggs and cheese, season. Pour the mixture over the potatoes, cover and allow to solidify over a medium heat for approx. 20 mins. Plate up and serve.
