Tomato tortilla

Ingredients

for 2 person

Potatoes and tomatoes
1 tbsp olive oil
350 g potato waxy, very thinly sliced
200 g cherry tomato, halved
¼ tsp salt
a little  pepper
Sauce
fresh egg
100 g Manchego, roughly grated
¼ tsp salt
a little  pepper

How it's done

Potatoes and tomatoes

Heat the oil in a non-stick frying pan. Stir-fry the potatoes for approx. 4 mins., add the tomatoes and cook for approx. 2 mins., season. Reduce the heat.

Sauce

Combine the eggs and cheese, season. Pour the mixture over the potatoes, cover and allow to solidify over a medium heat for approx. 20 mins. Plate up and serve.
