Summer drink with apricots
Ingredients
for 4 person
1 dl | water |
100 g | cane sugar |
2 tsp | ginger, finely chopped |
1 | lime, rinsed with hot water, dabbed dry, grated zest, all of the juice set aside |
150 g | apricots, cut into pieces |
ice cube | |
¼ | cucumber, in slices |
1 ¼ dl | white vermouth (e.g. Martini bianco) |
3 dl | mineral water |
4 | apricots, cut into wedges |
How it's done
Ginger and apricot syrup
Bring the water and sugar to the boil in a pan. Add the ginger, lime zest and apricots, simmer for approx. 5 mins., leave to cool in the pan, pass the mixture through a sieve to create a thickish syrup.
Summer drink
Place the ice cubes and cucumber in the glasses. Pour the syrup, reserved lime juice, vermouth and mineral water into the glasses, garnish with the apricots.
