Summer drink with apricots

Ingredients

for 4 person

Ginger and apricot syrup
1 dl water
100 g cane sugar
2 tsp ginger, finely chopped
lime, rinsed with hot water, dabbed dry, grated zest, all of the juice set aside
150 g apricots, cut into pieces
Summer drink
  ice cube
¼  cucumber, in slices
1 ¼ dl white vermouth (e.g. Martini bianco)
3 dl mineral water
apricots, cut into wedges

How it's done

Ginger and apricot syrup

Bring the water and sugar to the boil in a pan. Add the ginger, lime zest and apricots, simmer for approx. 5 mins., leave to cool in the pan, pass the mixture through a sieve to create a thickish syrup.

Summer drink

Place the ice cubes and cucumber in the glasses. Pour the syrup, reserved lime juice, vermouth and mineral water into the glasses, garnish with the apricots.
