Roasted radishes
Ingredients
for 4 person
2 bunch | radish incl. green parts (e.g. ProSpecieRara National) |
1 tbsp | olive oil |
½ tsp | salt |
a little | pepper |
salted water, boiling | |
½ bunch | lovage, finely chopped |
½ bunch | dill |
½ dl | olive oil |
½ tsp | salt |
a little | pepper |
125 g | cream cheese |
a little | sea salt |
How it's done
Radishes
Mix the radishes, oil, salt and pepper in a bowl, spread onto a baking tray lined with baking paper. Set aside about 20 g of the greens.
To roast
Approx. 20 mins. in the centre of an oven preheated to 220°C.
Dip
Blanch the reserved radish greens in boiling salted water for approx. 30 secs., drain, puree with the lovage, dill and oil, season. Stir the cream cheese until smooth, fold in the herb pesto, serve with the radishes. Sprinkle with fleur de sel.
