Just because it has to be quick, doesn't mean it can't be tasty. It's just as easy to make a good sandwich as it is a bad one! This fresh avocado sandwich is a slightly more substantial and compact version of a salad, and can be eaten on the go. There's no meat or cheese in this sandwich, but you honestly don't miss them. The avocado guarantees a tasty, smooth and creamy note, which is then enhanced by the even creamier, irresistible cashew sauce. The two flavours go together beautifully! The crispy wholegrain toast provides the necessary texture, while the crunchy vegetables add a wonderfully fresh touch. There's nothing to stop you using other vegetables, too, as long as the avocado, cashew sauce and crispy toast remain!

Ingredients

for 2 person

Cashew & lime sauce
3 tbsp cashew cream
1 dl soya drink or almond milk
3 tsp coconut palm sugar
1 ½ tsp lime juice
¼ tsp chilli flakes
½ tsp Himalayan salt
½ tsp pepper
Sandwich
avocado, sliced
½  lime, use only the juice
a little  Himalayan salt
4 slice bread (e.g. wholegrain bread), toasted
½  cucumber, sliced
4 leaf head lettuce
2 leaf red chicory
2 tbsp cress
2 handful alfafa and rocket sprouts

How it's done

Cashew & lime sauce

Thoroughly mix all of the ingredients, cover and set aside.

Sandwich

Drizzle the avocado slices with lime juice, season with salt. Spread the reserved sauce over the slices of bread. Top 2 slices of bread with the cucumber, lettuce leaves, cress, sprouts and avocado, drizzle the sauce over the top once again, place the remaining slices of bread on top, press down gently.
