Green picnic sandwich
Ingredients
for 2 person
| 3 tbsp | cashew cream |
| 1 dl | soya drink or almond milk |
| 3 tsp | coconut palm sugar |
| 1 ½ tsp | lime juice |
| ¼ tsp | chilli flakes |
| ½ tsp | Himalayan salt |
| ½ tsp | pepper |
| 1 | avocado, sliced |
| ½ | lime, use only the juice |
| a little | Himalayan salt |
| 4 slice | bread (e.g. wholegrain bread), toasted |
| ½ | cucumber, sliced |
| 4 leaf | head lettuce |
| 2 leaf | red chicory |
| 2 tbsp | cress |
| 2 handful | alfafa and rocket sprouts |
How it's done
Cashew & lime sauce
Thoroughly mix all of the ingredients, cover and set aside.
Sandwich
Drizzle the avocado slices with lime juice, season with salt. Spread the reserved sauce over the slices of bread. Top 2 slices of bread with the cucumber, lettuce leaves, cress, sprouts and avocado, drizzle the sauce over the top once again, place the remaining slices of bread on top, press down gently.
