Watermelon pizza
Ingredients
for 6 pieces
2 tbsp | olive oil |
5 tbsp | panko breadcrumbs |
1 | garlic clove, pressed |
1 | red chilli, deseeded, finely chopped |
1 | lime, rinsed with hot water, dabbed dry; use grated zest only |
½ bunch | peppermint, finely chopped |
½ bunch | coriander, finely chopped |
100 g | feta, crumbled |
1 slice | watermelon (approx. 300 g) |
How it's done
Topping
Heat the oil in a frying pan, fry the breadcrumbs, garlic, chilli and lime zest for approx. 3 mins., transfer to a bowl and leave to cool. Add the mint, coriander and feta, mix.
Watermelon
Cut the melon slice into chunks, sprinkle with the topping.
