Animal rice cakes

Ingredients

Apple and cashew spread
apple, peeled, diced
1 tbsp water
1 tsp lemon juice
cinnamon stick
100 g cashew nuts (immersed in water for approx. 1 hr., drained
1 tbsp maple syrup
rice cakes rice cakes
Polar bear
3 tbsp coconut flakes
½  banana, in slices
12  blueberries
Snow owl
½  banana, in slices
apple, thinly sliced
12  blueberries
2 tbsp flaked almonds

How it's done

Apple and cashew spread

Bring the apple, water, lemon juice and cinnamon stick to the boil, cover and simmer for approx. 10 mins., allow to cool, remove the cinnamon stick. Mix the apple sauce with the cashew nuts and maple syrup in a blender until a creamy mixture forms.

Spread the mixture onto the rice cakes.

Polar bear

Scatter desiccated coconut onto 4 rice cakes, create a polar bear face with banana and blueberries.

Snow owl

On the remaining rice cakes, use the banana, blueberries, apple slices and flaked almonds to turn each one into a snow owl.
