Animal rice cakes
Ingredients
for 8 pieces
| 1 | apple, peeled, diced |
| 1 tbsp | water |
| 1 tsp | lemon juice |
| 1 | cinnamon stick |
| 100 g | cashew nuts (immersed in water for approx. 1 hr., drained |
| 1 tbsp | maple syrup |
| 8 | rice cakes rice cakes |
| 3 tbsp | coconut flakes |
| ½ | banana, in slices |
| 12 | blueberries |
| ½ | banana, in slices |
| 1 | apple, thinly sliced |
| 12 | blueberries |
| 2 tbsp | flaked almonds |
How it's done
Apple and cashew spread
Bring the apple, water, lemon juice and cinnamon stick to the boil, cover and simmer for approx. 10 mins., allow to cool, remove the cinnamon stick. Mix the apple sauce with the cashew nuts and maple syrup in a blender until a creamy mixture forms.
Spread the mixture onto the rice cakes.
Polar bear
Scatter desiccated coconut onto 4 rice cakes, create a polar bear face with banana and blueberries.
Snow owl
On the remaining rice cakes, use the banana, blueberries, apple slices and flaked almonds to turn each one into a snow owl.
