Salmon and avocado are a match made in heaven. I love both for breakfast, but they are also great as a starter or an energy boost between meals. And because of their contrasting colours, they are also look really pretty together.

Ingredients

for 2 person

As a starter or snack
avocado, sliced
½  lime, juice only
100 g smoked salmon, cut into slices
4 tbsp horseradish mousse
1 handful cress
  pepper to taste

How it's done

As a starter or snack

Immediately drizzle the avocado slices with lime juice. Lay out the slices of salmon, spread a little horseradish mousse on each slice, top with a slice of avocado and roll up the salmon pieces. Garnish with a little cress and season with pepper.
