Air-cured beef rolls with Sbrinz cheese

Ingredients

for 24 pieces

Filling
125 g plain organic cream cheese
80 g grated Sbrinz
40 g smoked almond, roughly chopped
1 tbsp chives, finely chopped
1 ½ dl cream, whipped until stiff
Rolls
120 g Bündnerfleisch (Graubünden air-dried meat) in slices
1 bunch chives

How it's done

Filling

Beat the cream cheese and Sbrinz with a whisk until smooth, add the almonds and chives, mix. Carefully fold the cream into the mixture, cover and chill for approx. 30 mins.

Rolls

Spoon the filling into a piping bag with a smooth nozzle (approx. 1 cm in diameter). Pipe one strip onto each piece of beef, roll up. Tie one stem of chive around each roll.
