Air-cured beef rolls with Sbrinz cheese
Ingredients
for 24 pieces
125 g | plain organic cream cheese |
80 g | grated Sbrinz |
40 g | smoked almond, roughly chopped |
1 tbsp | chives, finely chopped |
1 ½ dl | cream, whipped until stiff |
120 g | Bündnerfleisch (Graubünden air-dried meat) in slices |
1 bunch | chives |
How it's done
Filling
Beat the cream cheese and Sbrinz with a whisk until smooth, add the almonds and chives, mix. Carefully fold the cream into the mixture, cover and chill for approx. 30 mins.
Rolls
Spoon the filling into a piping bag with a smooth nozzle (approx. 1 cm in diameter). Pipe one strip onto each piece of beef, roll up. Tie one stem of chive around each roll.
