Mayonnaise

Ingredients

for 1 dl

fresh egg yolk
1 tsp mild mustard
1 tsp lemon juice
¼ tsp salt
1 dl rapeseed oil or olive oil (not cold-pressed)
a little  pepper
a little  Worcestershire sauce

How it's done

In a bowl, thoroughly whisk the egg yolk with all the other ingredients up to and including the salt.

Add the oil drop by drop to begin with, then more gradually, whisking constantly to form a thick mayonnaise, season.
