Fabada (Spanish bean stew)

Ingredients

for 4 person

Beans
250 g white beans, dried
Stew
½ tbsp olive oil
onion, finely chopped
garlic cloves, finely chopped
bay leaf
1 litre water
400 g chorizo, cut into slices approx. 1 cm thick
200 g smoked boiled bacon, cut into slices approx. 1 cm thick
200 g smoked ribs, cut into slices approx. 1 cm thick
½ tsp paprika
some  saffron threads

How it's done

Beans

Soak the beans for approx. 12 hrs.

Stew

Heat the oil in a wide pan. Sauté the onion, garlic and bay leaf. Drain the beans, add to the pan and cook briefly. Pour in the water, bring to the boil. Reduce the heat, cover and simmer for approx. 1 hr. Remove the lid, add the chorizo, simmer for a further 30 mins. Add the bacon and all the other ingredients, simmer for approx. 30 mins. until cooked.
