Mediterranean pizza sandwiches

Ingredients

for 4 person

Pizza dough
500 g pizza dough
  oil for baking
To cook the meat
  oil for frying
pork cutlets (e.g. loin, approx. 120 g each)
¾ tsp salt
To make the sandwiches
250 g yellow and red cherry tomatoes, halved
200 g feta, crumbled
80 g baby spinach
½ bunch peppermint, cut into thin strips
150 g plain greek yoghurt
organic lemon, use grated zest and 1/2 tbsp of juice

How it's done

Pizza dough

Divide the dough into 4 equal pieces. On a lightly floured surface, flatten into mini pizza bases (each approx. 10 cm in diameter). Heat a little oil in a non-stick frying pan. Cook the pizza bases in batches over a medium heat for approx. 4 mins. on each side, remove, cover and set aside.

To cook the meat

Heat the oil in the same pan. Fry the cutlets for approx. 3 mins. on each side, remove, season with salt. Cut the meat into strips.

To make the sandwiches

Cut open the pizza rolls, fill with the strips of meat, tomatoes, feta and spinach. Mix the mint, lemon zest and lemon juice with the yoghurt, serve alongside.
